tonight i made honey roasted sweet potato, goats cheese and rocket pizza
to make the pizza dough:
250g cake flour
pinch of salt
3/4 cups lukewarm water
1/2 tablespoon olive or avocado oil
mix the flour, yeast and salt. make a well and add water and oil. bring it all together and knead for 10 minutes until soft and elastic. place in an oiled bowl, cover with clingfilm and leave in a warm place. when it has doubled it size, remove from the bowl and knock it back for a few minutes, place in bowl again and repeat process.
roast 2 x sweet potatoes cut into chunks with some olive oil, a squeeze of lemon, about 2 tablespoons of honey
make a tomato base (optional) by finely chopping 1/2 an onion, frying it with garlic in olive oil until soft then adding a tin of chopped tomatoes, a pinch of salt, a pinch of black pepper and 2 tablespoons of tomato paste. cook it until it reduces and becomes nice and thick. blend it in a blender and add some chopped fresh oregano, fresh basil and a teaspoon of balsamic vinegar.
when dough has risen nicely, roll and stretch it out until nice and thin, top with tomato base, sweet potatoes and chunks of goats cheese and mozzarella. cook at 200C until golden and crispy. top with wild rocket and eat it with an avo, olive and cos lettuce salad.
